Chicken soup is a soup made from chicken, simmered in water, usually with various other ingredients.
The classic chicken soup consists of a clear chicken broth, often with pieces of chicken or vegetables.
INGREDIENTS
Chicken leg - 3
Water - 4 cups
Garlic - 2 nos
Shallots - 2 no
Spring onion - 1 tbsp
Salt - as per taste
Pepper powder - 1/2 tsp
Butter - 1 tbsp
Carrots and beans - 1 tbsp each
Corn and peas - 1 tbsp each
Oats - 1 tbsp
Beaten eggs - 2 tbsp
METHOD
- In a pan, add chicken legs, water, garlic, shallots(1 no), spring onions, salt and pepper powder. Mix well.
- Cook for about 30 mins in low flame.
- Check salt and add if you want more salt.
- Strain the chicken stock into another bowl.
- Place the chicken pieces in another plate.
- Shred the chicken as required.
- Heat pan on medium flame. Add butter, shallots, carrots and beans. Mix well
- Saute for a few minutes. Don't overcook the veggies.
- Add shredded chicken. Mix well.
- Add chicken stock and one cup of water. Bring to boil.
- Add corn, peas and oats. Cook for 2 to 3 mins
- Pour beaten eggs. Stir at the same time.
- Turn off the flame.
