Very Easy Chicken Spring Roll with Homemade Sheets | Spring Roll



Ingredients

Chicken - 540 gm Pepper powder - 1 tsp Salt - to taste Crushed ginger garlic - 1 1/2 tbsp Vegetable oil - 2 to 3 tbsp (you can use any oil) Rice noodles - 1/2 cup Hot water - 3 cups Sliced carrots - 1 cup Sliced cabbage - 1 Cup Spring onion - 1/2 cup Tomato sauce - 1 tbsp All-purpose flour - 1 cup Salt - 1/2 tsp Sugar - 1/4 tsp Oil - for frying

Method

In a bowl, add chicken, pepper powder, salt, crushed ginger garlic and mix well. Heat pan in medium flame, then add oil, when oil becomes hot, add the marinated chicken and close lid, cook for about 30mins. Stir in between. When chicken is cooked, transfer the chicken pieces into another plate. Shred the chicken and keep it aside.

For making the chicken filling

Use the same pan that was used to cook the chicken.  Add sliced carrots, sliced cabbage, sliced red chilli, and salt. Mix well. Cook for a few minutes. Make sure not to overcook. Add spring onion and cook for 1 min. Add tomato sauce and mix well. Add shredded chicken and mix well. Check salt and add if needed. The chicken filling is ready.

For making rice noodles

In a bowl, add 1/2 cup rice noodles (as per taste).  Add hot water and soak for about 5 minutes. After 5 minutes, rice noodles are completely cooked.  Strain the noodles and keep aside.

For making spring roll sheets

In a bowl, add all-purpose flour, salt, sugar and water. Mix until no lumps. Make a thin batter. Strain the batter into another bowl. Heat the pan and add a little bit of oil if needed. Turn the heat to low. When pan becomes hot add spoonful of batter and spread it.  The sheets need to be very thin. Cook one side for about 1 to 2 mins. Add the chicken filling into the sheets and roll it. Heat pan in medium flame and add oil for frying.Shallow fry the chicken roll both sides. Serve hot with your favourite sauces.
