Ingredients
Granulated sugar -1 cup
Hot water - 1 cup
Butter, diced - 55 grams
Mixed spice - 1 tsp (cinnamon, coriander seeds, dill seeds, ginger, cloves, nutmeg)
Salt - 1/4 tsp
Mixed fruits - 1 cup (seedless raisins,blackcurrant)
Large eggs, lightly beaten - 2
All-purpose flour - 1 1/2 cups (195 grams)
Baking soda - 1tsp
Vanilla extract - 1 tsp
Chopped cherries - 1/3 cup (as per your taste)
Method
Butter, or spray with vegetable oil, a 9 x 5 x 3 inch (23 x 13 x 8 cm) loaf pan.
Preheat your oven to 160 degrees C.
In a large saucepan, over medium heat, add sugar and 1 tbsp of water and let the sugar caramelize until golden brown color.
Turn heat to low, add hot water and mix well. Be careful while adding hot water.
Then add mixed fruits and butter.
Boil for five minutes, then remove from heat and let cool till lukewarm.
In a large bowl, add the lukewarm fruit mix.
Add beaten egg and vanilla extract. Mix well.
Sieve the flour, baking soda, mixed spice, salt into the bowl.
Add chopped cherries and mix well.
Pour into your prepared pan and bake for 45 - 50 minutes or until a toothpick inserted into the center of the cake comes out clean.
Remove from the oven and let cool on a wire rack.
Cover and store, if possible, for a few days before serving. (for best results)
This fruit cake can be frozen.
Makes one loaf.
