How to make Tahini
Ingredients
Sesame seed - 1 cup
Salt - 1 pinch
Olive oil - 1 1/2 tbsp
Method
Add sesame seeds to a wide, dry saucepan over medium-low heat and toast, stirring constantly until the seeds become fragrant and very light-coloured.
Should be very careful here as sesame seeds can burn quickly. Make sure you don't burn the seeds.
Transfer to a bowl and cool completely.
Add the sesame seeds into the blender jar and blend.
Add salt and olive oil. Blend until it becomes smooth.
Transfer the sauce into an airtight jar.
Store tahini covered in the refrigerator for up to one month. You may notice it separates over time as natural peanut butter would. If this happens, give the tahini a good stir before using it.
How to make Hummus
Ingredients
Cooked chickpeas - 1 1/2 cup
Salt - as per taste
Olive oil - 1/4 cup(if required you can add 2 tbsp extra)
Paprika - 1/4 tsp
Cumin powder - 1/4 tsp
Tahini sauce - 2 tbsp
Water - 2 tbsp
Lemon juice - 1 tsp
Method
Peel the cooked chickpeas for a smooth hummus.
In a food processor, add chickpeas, tahini sauce, lemon juice, paprika, olive oil, salt, cumin powder. Blend the mix.
Check the consistency and if the consistency is too thick add a little more olive and water and blend until very smooth.
Serve hummus with a drizzle of olive oil and dash of paprika. Store homemade hummus in an airtight container and refrigerate up to one week.
