Chicken Roast - Nadan Chicken Varattiyathu


Chicken dry roast Kerala style / Nadan chicken varattiyathu / Kozhi peralan...It is a typical Kerala style chicken dish loaded with coconut oil and curry leaves. It goes well with rice and chapathi. INGREDIENTS Chicken - 1 kg Coconut oil - 2 to 3 tbsp Curry leaves - a few (as required) Coconut flakes / Thenga kothu - one handful Onion - 3 nos Shallots - 1/3 cup Ginger garlic paste - 2 1/2 tbsp Turmeric powder - 1/4 tsp Chilli powder - 1 tsp Coriander powder - 1 tbsp Pepper powder - 1 tsp Garam masala powder - 1 tsp Fennel Powder - 1 tsp Pink salt - 1 1/4 tsp (as required, if you don't have pink salt, you can use regular salt.) Sugar - 1/4 tsp Tomato - 2 nos METHOD - Heat pan on medium flame. Add oil, curry leaves, coconut flakes and stir until colour changes. - Add onion, shallots and salt. Cook until it becomes brown. - Add ginger-garlic paste. Saute for 1 min. - Add tomatoes and cook until it becomes mushy. - Add turmeric powder, chilli powder, coriander powder, pepper powder, garam masala, fennel powder. Mix well - Add salt as required. Add sugar and mix well. - Add Chicken pieces. Mix well. - Close lid and cook. - Open the lid and stir occasionally. Otherwise, it will stick to the bottom. - Cook for about 30 to 45 mins or until it's cooked. Enjoy!!
