Tender bites of chicken, stuffed into a fluffy baked potato with a perfectly crispy skin makes Chicken Stuffed Potatoes a perfect meal. INGREDIENTS Potato - 600 gm Coconut oil - 1 tbsp Finely chopped ginger garlic - 1 tbsp each Curry leaves - a few Finely chopped onion - 1 Salt - as per taste Chicken breast - 300 gm (boneless chicken) Pepper powder - 1 tsp Garam masala - 1/4 tsp Milk - 2 tsp Olive oil - 1 tbsp (or you can use butter)
METHOD First, cook the potatoes. In a pan, add coconut oil, finely chopped ginger-garlic. Saute for a few minutes. Then add curry leaves and finely chopped onion. Saute until the onion becomes translucent. Add salt as per taste and add chicken pieces, pepper, garam masala. Mix well Cook for 15 mins or until chicken is completely cooked. Once the chicken is cooked, let the chicken cool completely. In a grinder add the chicken and grind. Don't over grind. If you over grind the chicken will become a paste. Place the ground chicken into the pan and mix well (no need to turn the heat on) In a bowl, add the cooked potatoes. Add salt, milk and olive oil. Mash the potatoes until no lumps. Make sure your potato is noted too creamy. If the potato is too creamy then it becomes very difficult to make the shape and it will break. The consistency of the potato is very important. Shape the potato with chicken inside it. Dip the potatoes in beaten egg and then roll through breadcrumbs. Fry the potatoes both sides. Enjoy!!!
