INGREDIENTS Potatoes - 3 big size Olive oil - 1 tsp Salt - as per taste Pepper powder - as per taste Thyme - a few Butter - 1 tsp Garlic clove - 1 Ingredients for chicken stock Olive oil - 1/2 tsp Chicken - 3 big pieces (as required) Water - 3 cups Garlic cloves - 3 nos Spring onions - as required Salt - as per taste Pepper powder - 1/2 tsp (as per taste) METHOD - Heat pan on medium flame. Add olive oil, chicken, water, garlic cloves, spring onions, salt and pepper. - Cook for about 1 hr. - Strain the chicken stock into another bowl. - Cut the potatoes in the same size. - Soak in cold water and remove excess water from potatoes using a kitchen towel. - Heat pan on medium flame. Add olive oil, potatoes, salt and pepper. Cook both sides for about 2 to 3 mins. - Add thyme, garlic, butter. Cook for 1 min. - Remove excess oil. - Add chicken stock. - Preheat oven at 160 degrees. - Bake the potatoes for about 30mins. - After 30mins check if the potatoes are well cooked.
