Irani Pola is a Malabar speciality dish very similar to the cake but baked without oven. Easy to prepare and delicious dish with the richness of the chicken. INGREDIENTS Chicken breast - 1 no (approx 170 gm) (you can use boneless chicken) Turmeric powder - 1/4 tsp Chilli powder - 2 tsp, as per taste Pepper powder - 1 tsp, as per taste Salt - as per taste Ginger garlic paste - 2 1/2 tsp Coconut oil - 2 to 3 tbsp Onion - 1 no (Finely chopped) Curry leaves and green chilli - 1 tsp each, as per taste Garam masala - 1/2 tsp Coriander powder - 1/2 tsp Capsicum - 3 pieces sliced Coriander leaves - a few For batter: Egg - 2 nos All purpose flour / Maida - 1 cup Milk - 1 cup plus 2 1/2 tbsp Pepper powder - 1 tsp Salt - 1/2 tsp, as per taste Vegetable oil - 1/2 cup METHOD - Marinate chicken with turmeric powder, chilli powder, pepper powder, ginger garlic paste(1tsp) and salt. Mix well. - Heat pan on a medium flame, add coconut oil. - When oil becomes hot, add the marinated chicken. - Fry for about 5 mins. - Transfer fried chicken into another bowl. - In the same pan, add finely chopped onion, ginger garlic paste(1 1/2tsp), curry leaves and green chilli. Stir until colour changes. - Add pepper powder, garam masala, coriander powder. Mix well - Add fried chicken, salt(check salt and add). Cook for about 10mins or until cooked. For batter - In a grinder, add eggs, all-purpose flour, milk, pepper powder, vegetable oil and salt. - Blend smoothly. - Place a pan on low flame. When pan becomes hot, place another pan on top of it for baking. - Grease the baking pan. - Add half of the batter and close lid. - Cook for about 5 mins. - After 5 mins, add the chicken mix (keep aside a small portion of the chicken mix). - Add rest of the batter. - Add rest of the chicken mix, coriander leaves, and sliced capsicum. - Close lid and cook for about 20 - 25 mins. - After 25 mins open lid and check with cake tester or toothpick. When it comes out clean, the cake is ready. - Flip the cake into the pan and cook for another 5mins.(optional) Enjoy!!
