Orappam


Orappam is a traditional snack of Kerala which is made on festive occasions. It is a very delicious snack, which has a crispy exterior & a super soft fudge-like interior. Ingredients
Rice flour - 2 2/3 cup Egg - 1 Sugar - 1 1/3 cup Grated coconut - 5cups Water - for extracting coconut Crushed fennel seed - 1 tbsp Baking soda - 1/4 tsp Vanilla essence - 1tbsp Ghee - 2 tbsp Cashew nuts - 1/2 cup Condensed milk - as per your taste Method Extract coconut milk - Take all the grated coconut in a blender jar. - Add 1cup water and blend on high till the coconut is ground well. - Strain in a fine sieve and collect the first extract in a bowl. - This is the thick coconut milk or first milk. - Then collect and put back the coconut residue into the blender. - Add 1 - 2 cups water and blend again. - Strain and collect this coconut milk in another bowl. - This is the thin coconut milk or second milk. - Repeat the same process a third time, and collect the extract in the same bowl in which the second milk is collected. - Take 2nd coconut milk and mix it with the crushed fennel seed. - Mix the rice flour in the first milk. - To the rice flour mix, add the fennel seed mixture..a sieve should be used to filter out the solid particles. - Mix the egg and sugar in a blender or with a beater, once this is done, add it to the rice flour mix. - Add 2nd and 3rd milk. - Add Vanilla essence and baking soda to the rice mixture and mix it until its smooth. - Heat the pan(low heat), add 2 tbsp ghee and cashew nuts, stir until it changes color. - Add the rice mixture to this and stir until it becomes thick. - Apply ghee to the sides of the baking tray, then move the rice mixture to the baking tray, cover it with foil paper. - Bake it in the oven for 1 hour at 180 degrees or 160 degrees. - It should be cut only after it has completely cooled off.
