Pork roast | Kerala style


This is a very simple traditional Kerala style pork roast which is made with spices, shallots, crushed ginger garlic and so on. And yah!! taste is just amazing, especially for spicy food lovers. INGREDIENTS Fresh pork - 1kg Crushed ginger garlic - 4 to 5 tbsp Turmeric powder - 1tsp Garam masala - 1tsp Chilli powder - 1tsp Pepper powder - 1 1/2 tbsp (as per taste) Salt - as per taste Onion - 1 Curry leaves - few (one handful) Coconut oil - 1tbsp Shallots - 1 cup Green chili - 2 METHOD In a pressure cooker, add pork, add some crushed ginger garlic, add all the above-mentioned spices, onion, and salt. Pressure cook for about 5 to 6 whistles. In a medium-hot pan, pour some oil, add curry leaves, add remaining crushed ginger garlic and mix well. Saute for 3 to 4 mins until it becomes golden in color. Add shallots and green chili, mix well until it becomes translucent. Add cooked pork and mix well. Check salt and add salt if needed. Cook until the gravy becomes thick. Enjoy the dish with appam, chappathi or roti, bread, etc... Note: You can adjust your spice level as per your taste.
