INGREDIENTS For sugar syrup: Sugar - 1 1/2 cup Water - 3/4 cup Lemon juice - 2 tbsp Cloves - 3 nos Vanilla essence - 1/2 tsp For baklava: Pistachio - 200 gm Walnut - 100 gm Chopped almond - a few Cinnamon powder - 1/4 tsp Filo pastry sheets - 2 packets (here I used 29 sheets) Vegetable oil - 1/3 cup Butter - 130 gm METHOD Sugar syrup: Heat pan on medium flame. Add sugar, water, lemon juice, cloves, vanilla essence. Mix well. Sugar should dissolve completely. Turn off the heat. Strain the sugar syrup and keep it aside. Nut mixture: In a grinder, add pistachio, walnut, and cinnamon powder. Make sure not to over grind the nut mixture. Transfer the nut mixture into another tray. Add some chopped almonds and mix well. Keep it aside. Melting butter: In a pan, add vegetable oil, butter. Heat until butter melts. Keep it aside. Baklava: Cut the filo sheets according to your pan size. Place two sheets first in a greasing tray. Brush butter between every 2 layers of sheets. When you are done placing half of the sheets, spread a layer of nut mixture. Place the rest of the sheets. Spread 2nd layer of nut mixture after 5 to 6 sheets. Cover the top with the rest of the sheets. Here I used a total of 29 sheets. The sheet number may vary according to your pan size. Slice your baklava in any shape you like. Pour the leftover butter after you slice the baklava. Preheat oven at 180 degrees for about 10mins. Bake at 180 degrees for about 20 - 25 mins or until golden brown color appears. After baklava is done, rest for 5 mins and pour the sugar syrup over the baklava. Leave it at room temperature overnight. Next day you can cut the baklava. Enjoy!
