A quesadilla is a Mexican dish and type of taco. It's incredibly easy to make and tastes like a traditional Mexican Style Quesadilla.
INGREDIENTS
Boneless chicken pieces - 640 gm
Pepper powder - 1/2 tsp
Paprika - 1 tsp
Cumin Powder - 1/4 tsp
Italian seasoning - 1/2 tsp
Garlic granules - 1/2 tsp
Chilli powder - 1 tbsp (as required)
Salt - 1/4 tsp (as required)
Sugar - 1 pinch
Olive oil - 3 tbsp
Onion - 1 no
Crushed garlic - 2 tsp
Corn and peas - 1 tbsp each
Bell pepper - 1/2 cup
Tortillas - 8 nos
Cheddar cheese - as required
METHOD
In a bowl, add all the spices which are pepper powder, paprika, cumin powder, Italian seasoning, garlic granules, chilli powder, salt, and sugar. Mix well.
Add the mixed spices into the chicken and mix well.
Heat pan on medium flame. Pour some olive oil and add the marinated chicken. Cook well.
Transfer the cooked chicken to a bowl.
In the same pan, add olive oil, onion, crushed garlic and salt. Stir until raw smell goes.
Add corn and peas. Mix well.
Add bell pepper. Saute for a few minutes.
Add cooked chicken and mix well.
Check salt and add salt if you want more.
Brush one side of tortillas with olive oil.
Flip the tortilla and spread the chicken mixture over half of each tortilla. Put cheddar cheese on top of each tortilla and press down gently.
Turn the heat to low flame.
Cook on the hot pan for 2 mins each side until golden. Cut each tortilla in half and serve.
