Cooking the quinoa in chicken broth makes an excellent mouthwatering and healthy recipe. It gives more flavor to your dish. Always remember, while cooking the quinoa, the chicken broth should be very hot. And put the flame to low.
Cooking time is 20 to 25mins.
INGREDIENTS
Quinoa - 1 1/2 cups
Hot chicken broth - 3 cups
Sesame oil - 1 to 2 tbsp
Crushed Garlic - 2 tsp
Onion - 1nos
Beans - 1/2 cup
Carrots - 1/2 cup
Capsicum - 1/4 cup
Shredded chicken - as per taste
Dark soya sauce - 1 1/2 tbsp
Fresh parsley - a little
For making chicken broth:
Chicken - 3 to 4 pieces (you can add your favorite pieces)
Spring onion - 2 (if you don't have, use 2 shallots)
Crushed Garlic - 2 pieces
Water - 5 cups
Salt - 1 tsp (as per taste)
Pepper powder - 1/2 tsp
METHOD
In a hot pot, add chicken, spring onion, crushed garlic, water, salt, and pepper.
Cook for about 30 to 40mins.
Strain the chicken broth into a bowl and keep aside.
Move the chicken pieces to a plate and shred the chicken.
Rinse the quinoa thoroughly at least 5 times.
In a pan, add the cleaned quinoa and hot chicken broth. Turn the heat to low.
Close lid and cook for about 20mins or until all the water gets evaporated. Don't open the lid in between.
After 20 mins open the lid and check the water gets evaporated. If not, open the lid and cook until all the water gets evaporated.
In a pan add sesame oil and garlic. Mix well until raw smell goes.
Add onion and saute for a few minutes.
Add beans and carrots. Mix well.
Cook for a few minutes. Don't overcook the veggies.
Add shredded chicken, capsicum and dark soya sauce. Saute for a few minutes.
Add cooked quinoa and mix well.
Put a little fresh parsley on top.
