Let's learn how to make Rava Coconut Burfi. It is very easy to make.
Ingredients
Semolina /Rava - 1 cup
Sugar - 1 cup
Freshly grated Coconut - 1 cup
Ghee - 3tbsp
Rice flour - 3 tbsp
Water - 1/3 cup
Pistachio and almond(optional) - for garnish
Method
Grease baking pan with ghee and rice flour.
Heat pan in a medium flame, add sugar and water. Boil until you get a string consistency.
Add freshly grated coconut and stir until it becomes sticky.
Add Semolina / Rava and continue cooking. Once thick, add 2 tbsp of ghee and mix. Keep mixing until the mixture starts to leave the sides. Add remaining 1 tbsp ghee.
Keep a greased pan ready. Pour the mixture immediately into the baking pan and level. Cut into squares or your favorite shapes.
Sprinkle rice flour on top, so that it does not stick together.
Let it cool down.

Notes:
For white burfi, scrape the coconut gently without brown skin. Keep the flame medium always.
Do not overcook the mixture, otherwise, it will become hard or chewy.
Ghee can be reduced, just 2 tsp is also enough.
For leveling the burfi, you can use a greased flat bottomed vessel. A greased aluminum foil will also work.
