Ingredients
Pork - 1 kg (here I used pork belly)
Onion - 4 no
Crushed ginger garlic - 4 to 5 tbsp (as per your taste)
Pepper powder - 1 1/2 tsp(as required)
Kashmiri chilli powder - 2 tsp
Turmeric powder - 1 1/4 tsp
Coriander powder - 3 tsp
Garam masala - 1 tsp
Pink salt - as required (you can use regular salt)
Coconut oil - 3 to 4 tbsp
Green chilli - 2 no
Curry leaves - a few
Coconut flakes - 1/4 cup (or you can use small coconut bits)
Sugar - 1/4 tsp
Method
In a pressure cooker, add pork belly, 1 sliced onion, 2 tbsp of crushed ginger garlic, pepper powder, kashmiri chilli powder, turmeric powder, coriander powder, garam masala and pink salt. Mix well.
Pressure cook until 6 to 7 whistles.
In a pan, add coconut oil, 2 tbsp of crushed ginger garlic, green chilli, few curry leaves. Saute until raw smell goes.
Add coconut flakes and saute until golden brown.
Add 3 sliced onion and mix well. Cook until translucent.
Add 1/4 tsp of turmeric powder and saute for a few seconds.
Add cooked pork, salt if needed, pepper powder if needed and sugar. Roast until dry.
Stir in between and roast nicely.
Pork is ready!
